Keeping an even temperature and for long enough is a real challenge for most who smoke. Search the internet and you will find many, some using very much more expensive off-set smokers, who have to make a number of modifications to improve the performance of their smokers. Addressing some of the points raised in one of the other reviews. 1. Go the B&Q and buy a sheet of expanded steel and make a basket to hold the charcoal in the firebox. 2. Also buy a chimney charcoal starter and use it to fire up a good load of charcoal. Stack up the basket as much as possible with charcoal leaving space for the fired-up starter which you pour over the top. This will slowly burn down into the charcoal below. This gives you a higher heat and longer burn. Regulate the air flow, full open to start with, down to about 1/4 for ongoing. 3. Use a disposable foil tray in the bottom of the firebox to catch the ash. 4. Google "off-set BBQ mods" and see all the other things you can do to improve the performance. Happy smoking. 02 May 2016
Rated 3 out of 5 by Good value Bought this with the intention of using it alongside our regular BBQ for pulled pork and ribs etc (weather permitting of course). Other smoker BBQ's seemed to run at a few hundred pounds so for £80 it was worth a punt. It was fairly easy to assemble taking about an hour in total. Some of the punched holes in the metal frame needed clearing out to allow the bolts to pass through but generally it is well made. Haven't cooked on it yet but have experimented with various fuels and damper settings. The metalwork had an oil coating and this helped to burn it off. Initial thoughts are the firebox seems a bit undersized to keep the temperature at a reasonable level for cooking without having to add extra fuel during the process. Even when half filled with charcoal and wood chips the temperature dropped below 120 deg c after one hour. A 2kg pork shoulder needs 163 mins at 220 deg c in an oven according to the packaging. It might be easier to finish off the meat in the smoker for flavour rather than trying to cook it through completely but that kind defeats the whole point! Also the firebox might be a bit awkward to clean out due to its size and shape. Im still experimenting with the smoker box but the unit itself would be just fine as a BBQ anyway. All in all you get what you pay for but for around £80 it still represents good value. 26 April 2015
Rated 3 out of 5 by This is an entry level smoker This is an entry level smoker, so before you shell out for a more expensive model, it’s fun to experiment with. So OK, the review(s) so far aren’t that brilliant and yes it’s not a sturdy as top of the range models, but it does the job. I’ve only had one BBQ so far and it really made a difference to chicken, pork and burgers. So my next project, is to use it to just smoke food. Mine didn’t come with a foil baking case to catch fat in, so you may to need to supply your own 05 April 2015

The Houston Smoker BBQ Grill has been designed in a traditional American style. It features two sections, a smoker/firebox and a cooking grill both with their own lids.

The BBQ can be used in two ways. Fill the smaller smoker section with charcoal and smoker wood chips, place your food in the larger section and close the lids. The chimney will draw the heat through and cook your meat or fish. Your food will be tender and beautifully flavoured when cooked slowly like this. You can alternatively use either grill with charcoal underneath and cook on the grill in a regular way.
